Now what in fact are the characteristics of a Gouda Cheese?
- it is wheel-shaped;
- its weight is around 15 kilos;
- its fat content is at least 48+.

Gouda Farm Cheese is produced mainly on the farms in places surrounding Gouda, such as Stolwijk, Haastrecht and the Krimpenerwaard polder. The fact that all this cheese is named “Gouda” can be traced back to early trade. As these cheeses had all been marketed in Gouda for ages, this gave Gouda’s its world-wide fame.
Cheese is a food made of milk. During production the solid substances are segregated from the moisture. These solid substances (coagulants) are infused with lactic acid and salt during preparation. What distinguishes Farm Cheese from manufactured cheese is its taste. This varies by district and results from the use of raw milk. The varying tastes greatly depend on climate, soil and grass quality.



The Gouda Cheese and Crafts Museum arranges farm-cheesemaking demonstrations at frequent, regular intervals. This happens on the second floor of the cheese weighhouse, which has been fully laid out in accordance with cheese and cheesemaking. As this process lasts several hours you will have plenty of time for a leisurely stroll around the rest of the museum.
